Before cutting, the sides of beef are hung in a chill at 1º C for a minimum of three weeks, usually more. This is an essential stage in the maturation process, and contributes to the tenderness and superb eating quality of the meat. Then the beef is cut into joints, steaks etc. and neatly vacuum packed, sealed and fully labeled with the weight, price and use-by date. This packing also extends the shelf life, and is strong enough to allow you to freeze the meat if you so wish.
A wonderful richly coloured fine textured meat, nicely marbled, tender, juicy and so full of flavour, ready for maximum enjoyment.
