We are suppliers of prime quality Highland Beef, naturally reared and tasting superb. This beef comes from pedigree Highland Cattle, Scotland's best known and oldest native breed.    (See Our Highland Cattle  for information on this fascinating breed) Being a bit smaller and slower growing than modern beef cattle this breed is not part of mainstream beef production in Britain. So you need to come to a specialist producer like ourselves to discover and enjoy this wonderfully flavoured old fashioned beef. 

  Why is Highland Beef so special?

Highland Beef is outstanding for its flavour, tenderness and fine texture.  Although ean and low in cholesterol, without too much outer fat, it does contain the marbling or muscle fat which you don't always see in other beef. which dissolves in cooking enhancing the succulence and flavour.  This marbling contains essential and healthy fatty acids and dissolves in the cooking, adding to the meat's succulence.

What makes it so good?

A combination of factors - the breed itself,  a grass based diet, good management  and very importantly, ensuring that the sides of beef are hung in a chill for at least three weeks before cutting. This adds to the tenderness and the slight drying out reduces the level of shrinkage during cooking.
